The Simplest and most logical definition of sustainability is coffee grown in a manner that is kind to the environment and it's people. Coffee grown without the use of herbicides and pesticides and coffee production that minimizes the consumption of water, and cleaning of the water that is used. Sustainable farms use fertilizers and organic matter composed of the mucilage and pulp of the processed coffee. This type of soil conservation has been shown over time to increase the soil nutrient and mineral content. Sustainable farming may also include biodiversity of crops, like bananas or other tropical crops that tend to preserve and provide for a more uniform substrate.

Sustainability includes providing for the well being of those whose hard work and toil of human endeavor bring forth these special resources for the world to enjoy. It includes education, health care, financial security through decent wages and good working conditions for the farmers and their families.
